Sweet Potato Doughnuts with Maple Icing

    Don't remember how I got off-site with this recipe. Maybe I was looking for new ways to make sweet potatoes.
    A very good doughnut with a powdered sugar icing dipped in pecans. YUM-YUM.
    This recipe makes a lot. Rolled out the first batch more toward the 1/4" size than the 1/2" size and it left the holes open. Holes closed up a lot more at the 1/2 inch size. Quarter inch size boiled up in 45 sec/side. Half inch size boiled up in 1 minute/side. Did make a couple larger ones of the final scraps which cooked up in 1 1/2 minutes/side.
    Ran out of pecans and just did the rest in icing-both sides.
    Did a special trick with the sweet potato to make it even sweeter. Baked it on 250F for 4 hours. A low slow bake keeping the internal potato temp between 135 to 170 is supposed to make them sweeter. And it does.
    Recipe made 49 doughnuts for me and that's because the first ones were rolled out thinner. Also probably why I ran out of crushed pecans.
