Chicken Leftovers - what do you do with it?

I really enjoyed the last few days with everyone's suggestions to do with left over ham - I learned a lot, and I thought to learn what you all might do with leftover chicken?

Please Share with us your expert creative meals and ideas on leftover chicken. (Turkey allowed too)

I added a variety of recipes yesterday that used cooked chicken to create a 'new' meal...

Make some chicken broth by boiling up the chicken with onions, celery, peppers, peppercorns. There are some good broth recipes on this site.

Use the chicken, post broth, in another meal that has flavor that stands on its own, as the chicken will be drained of its flavor for the most part. Say a good pot pie recipe.

As luck would have it, I have a couple of good broth recipes as well as a great pot pie recipe.

Store broth in the fridge or freeze it in ice cubes.
