How to microwave Bacon

    Just thought I would share this from my Illustrated Microwave cookbook. I've always been terrible with cooking bacon on the stove:


    Bacon is best cooked in the microwave; it doesn't curl or shrink as it does when cooked conventionally, and clean-up is easy. Bacon slices vary in thickness, as well as in sugar and fat content. To ensure that your bacon cooks evenly, choose slices of an equal thickness and with a similar fat-to-lean ratio. To separate bacon slices easily, heat package on High 15 to 30 seconds.

    Do not let bacon slices overlap or they will not cook properly. When done, bacon will be evenly browned. It should be left to stand for about 5 minutes after which time it will be crisp.

    Instructions

    Cooking Bacon -

    Place 2 paper towels, one on top of the other, on plate or paper plate; place 2 slices bacon on towels. Cover with one more paper towel. Cook on High 1 1/2 (1:30) to 2 minutes, until bacon is browned; or cook on microwave bacon rack. Let stand 5 minutes.

    Cooking bacon in batches -

    Place 2 paper towels, one on top of the other, in a 12" by 8" baking dish; arrange 5 slices of bacon on towels. Cover with 2 more paper towels, 5 more slices of bacon, then 1m ore paper towel. Cook on High (7:30) to 9 minutes, until bacon is browned, rotating dish halfway through cooking. Let stand 5 minutes.
