Lesser fat muffins

    Have you ever tried to halve the amount of fat (butter, oil, etc.) used in you muffins? I have learned it from Epicurious and it works, at least for me: I just use half of the fat stated in the recipe and substitute the other half for applesauce.
    They keep their moist with less calories¡¡

    Also, at some point, years ago, I found a fat-free cookbook that used applesauce and other similar ingredients in place of butter. I got it for one of the kids but not sure if it was ever used.

    I use applesauce almost every time I bake muffins and they taste great! Now they have the individual serving that has added fiber, calcium, and antioxidants. Just a little boost of stuff that is good for you. I always lower the amount of sugar in muffins.
