TURKEY WINGS

    i am always buying turkey wings.. I SIMMER about 4-6 of them until the meat is tender in: canned chicken broth, quart of water, and a tablespoon of chicken soup base (I get this from a restaurant supply or Sam's) with a couple unpeeled whole carrots, half a unpeeled onion, and about 3 stalks of celery uncut. I then let it cool in the liquid, pour through cheese cloth, debone the wings. I seperate the meat into packages for soup, or enchlidas or what ever. I package the broth in heavy zip locks, which I freeze flat on a cookie sheet. This is also for soup, gravy or again what ever. You can put sage, garlic and your favorite seasonings when you thaw, as some of those flavors might not be what you want in everything. WHEN THE BROTH IS FROZEN YOU CAN STAND IT UP AND IT DOES NOT TAKE UP MUCH ROOM.
