Espalier Training Fruit Trees

    Spill your guts on what espalier training is all about!
    I'm wanting to do apples and pears and maybe plums or peaches or cherries. I'm open to suggestion for other fruits that are not difficult to espalier.
    What are some tried and true techniques?
    My biggest concern is getting spur bearing trees, as opposed to tip or tip/spur bearing, on the right root stock that will dwarf the tree but give it enough root so the trees will stand on their own after several years of being trained.
    Also wanting annual bearing trees as opposed to bi-annual.
    Going to try to make a fence line with espalier trees that have four sets of horizontal arms spaced every 18" vertically.
