Oatmeal Pastry

    Trying my hand at the Oatmeal Pastry recipe by whodunitrdr.

    Threw the shortening in the freezer for several hours to firm it up. It came out of the freezer the consistency of hard butter fresh from the fridge. That's a good thing. It made cutting the shortening into the flour mixture better. Fluffed in 8 tablespoons of ice water. Kneaded a couple/three times to bring the dough ball together. Divided and patted out 2 hockey pucks that are chilling in the fridge.

    Note: This recipe has a 2.5:1 ratio flour:fat. I have had 3:1 ratio doughs turn out well and slightly over 2:1 ratio doughs turn out not so well. Anxiously anticipating the results.

    Bottom crust rolled out just fine. The oats give the crust an interesting look. Had to use an icing knife to free up the crust from the work surface a couple of times but the dough stayed together. It's in the pyrex pan chilling.
    Have a new apple filling I want to try out on this crust. It's put together without fluids so I am not going to half bake the crust.
