Whole Chickens

    For $2 or more less a pound, the whole chicken is an awesome deal if you're willing to take a knife to it. You can get 2 meals for the family from all the usual parts, but if you get very frugal (me) watch out. I usually debone the breasts and take the bones from that and the back and neck and simmer that into a broth. Making your own broth alone covers the cost of the whole chicken when caomparing to canned broth. I also can pick the bones clean to make Enchiladas or some other caserole.

    I'm also trying to learn not to cook "big" anymore. I'm famous for making way more than needed. But I have two grown children and I never know when they will pop in for dinner, so I always make enough just in case. My two younger children are really bad about eating leftovers. Nothing irritates me more than to throw food out. So now, I try to plan meals where I can use the leftovers the next night in a different way. Casseroles are great that way. You can throw in all kinds of things and the kids never know most of what they are eating they had the night before, lol.

    I also, have been buying more store brands than I ever used to. We have the Publix stores here and I have found that most of their store brand products are just as good. As a matter of fact, there are a few items I actually like better than the brand name.

    I've been watching on line and cooking magazines for more recipes to use your leftovers with. Perhaps some will share some here.

    for the chicken - I have been doing that now for a few months, I am amazed of how much I can do with chicken if I am a little creative... I have posted some of those recipes - search for leftover ideas for chicken, lamb, etc... on my page and you will find them...

    I also came across a site (ok several) that were specific to left over chicken recipes - I agree with you kimmer, definitely disguise the chicken into a new meal - the kids will never know. I recently made pulled BBQ chicken quesadillas and sandwiches...who knew....
