  10 oz. frozen spinach, defrosted (or fresh spinach)
  9 oz. marinated artichoke hearts, quartered
  3 green onions, chopped
  1 quart cubes good quality white bread
  1/2 lb. mozzarella
  4 eggs
  2 cups milk
  1/2 cup grated parmesan
  salt/pepper
  In a buttered 8-inch baking dish combine spinach, artichokes, green onions, bread cubes and half of mozzarella. Sprinkle with the other half of mozzarella.
  In a medium bowl, whisk together eggs, milk, Parmesan, salt and pepper to taste. Pour over veggies and bread mixture. Bake at 350F oven for 20 min., raise the oven temp. to 385F and bake 20 min. more, or until the pudding is puffed and golden in color. Great way to use up your garden spinach!
