Saffron Tips

    I found these tips in my Washington Post Newsletter.

    "Saffron, a gorgeous, aromatic but very expensive seasoning.

    About 10 to 15 threads equals 1 pinch, or 1/8 to 1/4 teaspoon.

    It keeps for about six months in its original packaging (usually in a small wax envelope inside an airtight container); after that, it tends to lose flavor."

    SUBSTITUTION: "If you don't have it on hand or don't feel like investing, you can substitute a mixture of 1/2 teaspoon ground turmeric and 1/2 teaspoon mild paprika."

    Sadly... I think my saffron in my cupboard is about 5 yrs old!!! It still lends "color" but not much flavor...
