Scrambled Tofu

    Wanted to share this warm and nourishing way to get some balance in the morning. I'm a lacto-vegetarian and don't eat eggs so I came up with this idea to have this scrambled tofu on hand in the morning.

    Depending on how many people want this otheirtoast in the morning is how much you would want to double or even triple this recipe at the beginning of the week, say Sunday night. You can keep it in the frig over the week and put it on toast in the morning. Well of course heating it up is a good idea before. It tastes similar to eggs, but a bit more spicy to warm your tummy. If you don't like it spicy, just leave out the peppers. You can even put it on a Hi-Protein toasted bread. Better for you yet, try it on some spelt bread or english muffin.

    Also the tumeric is excellent for the joints and has lots of antioxidants. Because they have less Alzheimer's in India and they eat alot of Tumeric, research is being done to see if this spice may slow the growth of protein on the brain reducing the incidence of Alzheimer's disease. So getting it everyday in the recipe will be really excellent for you. Not to mention it reduces inflammation in your joints. Also the Black Salt is something you can find in the Indian Grocery store as well, it's high in iron, good for your eyes and digestion. It kind of smells like eggs as well because it's sulphury tasting.

    Scrambled Tofu

    1 lb Regular or Firm Tofu diced or mushed
    1-2 tsp. olive oil
    1/2 teaspoon of cumin seeds (optional) - Cumin is good for helping better absorption of the nutrition in the food.
    1 onion diced
    2 cloves chopped garlic or 1 t garlic powder if you are in a hurry!
    1 minced serreno chile or 1 t red chili flakes (optional)
    1 small tomato diced (optional)
    1 teaspoon Turmeric powder
    Black Salt to taste (high in Iron, good for the eyes and digestion) - also has that same sulphury tast and smell of eggs.
    1 Tablespoon of Nutritional Yeast (high in Vitamin B) optional

    Put olive oil in pan and sprinkle cumin seeds in. Sizzle them for 30 seconds. Sauté onion, garlic and serreno chile in oil (add a little water if necessary), saute' onion is transparent, then add tomato and saute for 3 min. Add tofu and remaining ingredients and stir fry until all liquid is dissolved about 15-20 minutes, after cooking sprinkle the Nutritional Yeast on top. Also you can add Tabasco sauce before eating.
