Tofu, Seitan, or Tempeh?

    Which main protein source do you prefer? I'm a tofu girl, but I love to have seitan, too, when I'm in the mood for something that just soaks up all the flavor of the other ingredients in the dish. The only time that I've really had Tempeh was when I bought it from my local health food store, and it was definitely a disappointment. Feel free to introduce other protein sources that you like.
