    Something I found a few years back, I know it is an article written by Bridget Diana Soeder.

    In the Japanese culture, 'miso' is synonymous with good health and longevity of life.Within the last two decades the rest of the world might be finally catching on to what many Japanese people have known for centuries.

    My favorite miso paste is red. although a lot of people seem to prefer the lighter color. I have tried the miso paste from the grocery stores and it just does not taste good to me, not like you find in the Oriental Markets.
