Oat Bran Fruit Muffins Recipe

Ingredients
  • 1 tsp cinnamon .
  • cooking spray .
  • 1/2 c low-fat buttermilk (or use 1/3 c non-fat yogurt plus skim milk to level it off to 1/2 c) .
  • 1/3 c brown sugar (use a half c if you like your muffins sweeter) .
  • 1 tsp baking powder .
  • 1/8 tsp nutmeg .
  • 1/2 c mixed dried fruit (if you can't find pre-mixed dried fruit, make your own combination or use raisins) .
  • 1/4 tsp salt .
  • 2 tbsps canola oil .
  • 1/4 c oatmeal, regular not instant .
  • 1 c unsweetened applesauce .
  • 2 egg whites .
  • 2 c oat bran .
  • 1/2 tsp baking soda

Directions
  • Step #1 Preheat oven to 350 degrees (180c).
  • Step #2 In one bowl mix all of the dry ingredients – oat bran, fruit, cinnamon, baking powder, oatmeal, nutmeg, baking soda & salt.
  • Step #3 In a second bowl, lightly beat the egg whites by hand.
  • Step #4 Whisk in the yogurt, oil, applesauce & brown sugar.
  • Step #5 Fold the wet ingredients into the dry ingredients until just mix.
  • Step #6 Do not over beat as it will result in a tough lumpy muffin.
  • Step #7 Spoon batter into lightly sprayed muffin tin.
  • Step #8 (Use paper liners if you prefer.
  • Step #9 ) Bake 33 to 38 mins, toothpick should be clean.
