Broccoli Ham Casserole Recipe

Ingredients
  • 4 c rotini pasta or your favorite shape pasta .
  • 2 tsps marjoram .
  • 3 garlic cloves, crushed .
  • 3 tbsps olive oil .
  • 1 small red bell pepper, sliced .
  • 1/2 tsp pepper .
  • 5 sprigs fresh thyme leaves .
  • 3/4 tsp salt .
  • 3-4 tbsps flour .
  • 2 c cubed ham .
  • 2 c sliced mushrooms .
  • 1 small onion, finely sliced .
  • 2 c small broccoli florets .
  • 2 c fat-free evaporated milk .
  • 3/4 c shredded cheddar cheese or monterey jack cheese

Directions
  • Step #1 Prepare pasta according to package directions; drain well.
  • Step #2 Spray a 2-qrt casserole with cooking spray.
  • Step #3 Place drained pasta in casserole & set aside.
  • Step #4 Preheat oven to 350°F Combine milk, flour, thyme & marjoram in a small bowl & set aside.
  • Step #5 Heat a large, nonstick skillet over medium-high heat.
  • Step #6 Add oil & sauté onion, garlic, salt & pepper for 4 mins, mushroom, bell pepper, broccoli, stirring frequently.
  • Step #7 Add ham & heat thoroughly, about 2 more mins.
  • Step #8 Add reserved milk mixture & stir until thickened, about 4 mins; do not boil.
  • Step #9 Sprinkle top ham mixture over the pasta in the prepared casserole.
  • Step #10 Sprinkle top with cheese & bake uncovered for 15 mins, or until cheese is melted.
