Mussels Steamed In White Wine Recipe

Ingredients
  • 1/4 c finely sliced fresh parsley
  • 1 1/2 c finely sliced onion
  • 1 1/2 c dry white wine
  • 1/2 tsp black pepper
  • 3 lbs mussels, scrubbed & debearded (about 60 mussels)
  • 1 tbsp olive oil

Directions
  • Step #1 Heat olive oil In a large-ish stockpot over med-heat/flame.
  • Step #2 Add onion, & sauté for 4 mins or until tender.
  • Step #3 Add wine, & bring to a simmer.
  • Step #4 Add mussels; cover & cook 5 mins or until shells open.
  • Step #5 Remove from heat, & discard any unopened shells.
  • Step #6 Divide mussels & broth evenly among 4 shallow bowls; sprinkle with parsley & pepper.
