Grilled Artichokes Recipe

Ingredients
  • 2 tbsps lemon juice
  • 1/4 tsp pepper
  • 1 tbsp plus 1/2 tsp salt
  • 3 cloves garlic, minced
  • 3 tbsps olive oil
  • 6 artichokes
  • 1 lemon

Directions
  • Step #1 Slice tops off artichokes, trim stems, pull off small leaves, & snip off thorny tips.
  • Step #2 In a large pot, bring 1 to 2 inches of water to a boil.
  • Step #3 Add 1 tbsp salt, the juice of 1 lemon, & artichokes; cover & steam until artichoke bottoms pierce easily, 20 to 40 mins.
  • Step #4 Drain artichokes.
  • Step #5 When cool enough to handle, cut each in half lengthwise & scrape out fuzzy center.
  • Step #6 In a bowl, mix garlic, olive oil, 1/2 tsp salt, 2 tbsps lemon juice, & pepper.
  • Step #7 Brush artichokes with garlic mixture & set, cut side down, on a grill over med-heat/flame.
  • Step #8 Grill, turning once, until lightly browned, 8 to 11 mins.
  • Step #9 Green olive dip.
  • Step #10 In a mixer, 1 tbsp drained capers, 1/2 tsp Dijon mustard, 1/4 tsp pepper, 5 tbsps extra-virgin olive oil, whirl 1/2 c sliced parsley, 1 tbsp lemon juice, 2 tbsps sliced green olives, & 1/8 tsp salt until chunky.
