Sautéed Soft-shell Crabs With Asian Mignonette Recipe

Ingredients
  • 1/2 tsp minced garlic
  • 2 tbsps butter or margarine
  • 6 soft-shell crabs (2 1/2- to 3-oz. size; see notes)
  • 1/4 tsp salt
  • 1 tsp minced parsley
  • 2 tbsps rice vinegar
  • 1 tsp minced fresh ginger
  •  All-purpose flour
  • 2 tbsps lime juice

Directions
  • Step #1 In a small bowl, parsley, garlic, ginger, mix rice vinegar, lime juice, & salt.
  • Step #2 Set mignonette aside.
  • Step #3 Gently lift (but don't detach) each side of the back shell of the crab & pull off & discard the soft gills; lay shell back in place.
  • Step #4 Rinse crab & pat dry.
  • Step #5 Coat crab with flour & shake off excess.
  • Step #6 Melt butter in an 11- to 12-inch nonstick frying pan over medium-high heat.
  • Step #7 Add crabs & brown well, turning once or twice, about 7 mins total.
  • Step #8 Lift from pan & drain briefly on paper towels.
  • Step #9 Serve crabs hot & drizzle to taste with mignonette.
  • Step #10 Nutritional analysis per crab.
