Ingredients
1/2 tsp minced garlic
2 tbsps butter or margarine
6 soft-shell crabs (2 1/2- to 3-oz. size; see notes)
1/4 tsp salt
1 tsp minced parsley
2 tbsps rice vinegar
1 tsp minced fresh ginger
All-purpose flour
2 tbsps lime juice
Directions
Step #1 In a small bowl, parsley, garlic, ginger, mix rice vinegar, lime juice, & salt.
Step #2 Set mignonette aside.
Step #3 Gently lift (but don't detach) each side of the back shell of the crab & pull off & discard the soft gills; lay shell back in place.
Step #4 Rinse crab & pat dry.
Step #5 Coat crab with flour & shake off excess.
Step #6 Melt butter in an 11- to 12-inch nonstick frying pan over medium-high heat.
Step #7 Add crabs & brown well, turning once or twice, about 7 mins total.
Step #8 Lift from pan & drain briefly on paper towels.
Step #9 Serve crabs hot & drizzle to taste with mignonette.
Step #10 Nutritional analysis per crab.
