Pita Chips With Eggplant Caviar Recipe

Ingredients
  • 2 tbsps sliced fresh flat-leaf parsley
  • 1/4 tsp salt
  • 4 (6-inch) pitas
  •  Pita chips:
  • 2 tbsps extravirgin olive oil
  •  Caviar:
  • 1 garlic clove, minced
  • 1/4 tsp black pepper
  •  Parsley sprigs
  • 1 tbsp capers, drained & sliced
  •  Lemon wedges (optional)
  • 1 eggplant, cut in half lengthwise (about 1 1/2 lbs)
  • 2 tbsps minced shallots
  • 2 canned anchovy fillets, patted dry & minced
  •  Cooking spray
  • 1/4 tsp salt
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare pita chips, split pitas; cut each half into 8 wedges.
  • Step #3 Place wedges in a single layer on a baking sheet coated with cooking spray; coat wedges with cooking spray.
  • Step #4 Sprinkle top with 1/4 tsp salt.
  • Step #5 Bake at 350° for 15 mins or until lightly browned.
  • Step #6 Preheat broiler.
  • Step #7 To prepare caviar, cut sides up, place eggplant halves, on a baking sheet coated with cooking spray.
  • Step #8 Lightly coat eggplant with cooking spray, & broil 15 mins or until tender.
  • Step #9 Remove from oven.
  • Step #10 Cool on pan for 10 mins; peel.
  • Step #11 Coarsely chop pulp; place this in a medium bowl.
  • Step #12 Add parsley & next 8 ingredients (through garlic), stirring until mixed.
  • Step #13 Garnish with parsley sprigs; serve this with pita chips & lemon wedges, if desired.
