Rosemary-apple Bread Recipe

Ingredients
  • 1 package quick-rise yeast (about 2 1/4 tsps)
  •  Cooking spray
  • 1 tsp finely sliced fresh rosemary
  • 1 c sliced peeled Granny Smith apple (about 1 small)
  • 1 c warm water (100° to 110°)
  • 2 tsps butter, melted
  • 1 1/4 tsps salt
  • 3 c all-purpose flour, divided

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine 2 3/4 c flour, salt, rosemary, & yeast In a large-ish bowl, stirring with a whisk.
  • Step #3 Add water, stirring until a soft dough forms.
  • Step #4 Turn dough out onto a floured surface.
  • Step #5 Knead until smooth & elastic (about 8 mins); add enough of remaining flour, 1 tbsp at a time, to prevent dough from sticking to hands.
  • Step #6 Cover up & let rest 5 mins.
  • Step #7 Knead in apple.
  • Step #8 Place the dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #9 Cover up & let rest 10 mins.
  • Step #10 Preheat oven to 375°.
  • Step #11 Shape dough into a loaf; place dough in an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
  • Step #12 Gently press dough into pan; cover.
  • Step #13 Let rise in a warm place (85°), free from drafts, 30 mins or until doubled in size.
  • Step #14 Bake at 375° for 45 mins or until bread is lightly browned & sounds hollow when tapped.
  • Step #15 Brush top this with butter.
  • Step #16 Cool in pan 5 mins.
  • Step #17 Remove from pan, & cool completely on a wire rack.
