Clementine's Fruit And Nut Granola Recipe

Ingredients
  • 3/4 c canola oil
  • 2/3 c dried sour cherries
  • 2/3 c slivered dried apricots
  • 6 c regular rolled oats
  • 1 tbsp vanilla
  • 1 c honey
  • 2 c almonds
  • 1 tsp ground cinnamon
  • 2/3 c dried cranberries

Directions
  • Step #1 In a large bowl, almonds, mix oats, & cinnamon.
  • Step #2 In a smaller bowl, oil, whisk together honey, & vanilla.
  • Step #3 Stir honey mixture into oat mixture until well mixed.
  • Step #4 Spread mixture in a lightly oiled 12- by 15-inch baking pan.
  • Step #5 Bake in a 350° regular or 325° convection oven until golden brown, 20 to 25 mins.
  • Step #6 With a wide metal spatula, stir granola, scraping sides & bottom of pan.
  • Step #7 Reduce heat to 225° & continue to bake 1 hr, stirring several times.
  • Step #8 Let cool completely in pan, then scrape into an airtight container.
  • Step #9 In a smaller airtight container, mix cherries, cranberries, & apricots.
  • Step #10 Store fruit & granola at about room temp up to two weeks.
  • Step #11 Add dried fruit when serving.
