Ricotta Omelet With Swiss Chard Recipe

Ingredients
  • 1 bunch Swiss chard, cleaned & stemmed
  • 1 tbsp milk or water
  • 1/2 tsp kosher salt
  • 3 eggs
  • 3 tbsps butter
  • 1/2 tsp freshly ground black pepper
  • 1/3 c ricotta

Directions
  • Step #1 Crack the eggs into a small mixing bowl.
  • Step #2 Add the milk or water, salt, & pepper.
  • Step #3 Briskly stir with a fork until well beaten; set aside.
  • Step #4 In an 8-inch nonstick skillet, melt 2 tbsps of the butter over medium-high heat.
  • Step #5 Add 4 or 5 of the Swiss chard leaves & sauté until just wilted.
  • Step #6 Remove from the pan & set aside.
  • Step #7 Melt the remaining butter in the skillet, then slowly pour in the egg mixture, tilting the pan to spread it evenly.
  • Step #8 Let the eggs firm up a little, allowing some of the remaining liquid to flow to the sides of the pan.
  • Step #9 Continue to cook for about another min, but while the center is still a bit runny, spoon in the ricotta.
  • Step #10 Tilt the pan to one side and, using a spatula, fold about 1/3 of the omelet over the ricotta filling.
  • Step #11 Shake the pan carefully to slide the omelet to the edge.
  • Step #12 Holding the pan near the serving plate, tip it so the omelet slides onto the plate.
  • Step #13 Serve with the Swiss chard.
