Frittata With Mushrooms, Linguine, And Basil Recipe

Ingredients
  • 1/2 c (2 oz) shredded part-skim mozzarella cheese
  • 2 c hot cooked linguine (about 4 oz uncooked pasta)
  • 2 tsps butter, melted
  • 1/2 c 1% low-fat milk
  • 3/4 tsp salt
  • 3 c sliced cremini mushrooms
  • 1/3 c sliced fresh basil
  •  Cooking spray
  • 1/8 tsp freshly ground black pepper
  • 1 1/4 c thinly sliced leek (about 2 large)
  • 4 large egg whites
  • 3 large eggs

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 Heat a large nonstick skillet over med-heat/flame.
  • Step #3 Coat pan with cooking spray.
  • Step #4 Add mushrooms & leek; cook 6 mins or until leek is tender, stirring frequently.
  • Step #5 Combine milk & next 5 ingredients (milk through eggs) In a large-ish bowl, stirring with a whisk.
  • Step #6 Add leek mixture, pasta, & basil; toss carefully to mix.
  • Step #7 Heat pan over medium-low heat.
  • Step #8 Coat pan with cooking spray.
  • Step #9 Add egg mixture; cook this until edges begin to set (about 4 mins).
  • Step #10 Gently lift edge of egg mixture, tilting pan to allow some uncooked egg mixture to come in contact with pan.
  • Step #11 Cook 5 mins or until almost set.
  • Step #12 Sprinkle top evenly with cheese; wrap handle of pan with foil wrap.
  • Step #13 Bake 7 mins or until golden brown.
  • Step #14 Cut into 8 wedges.
