Winter Squash Chai Bread Recipe

Ingredients
  • 1/2 c (1/4 lb.) butter, at about room temp
  • 2 c all-purpose flour
  • 1 c mashed cooked winter squash, such as butternut or acorn
  • 1 1/2 tsps salt
  • 2 tsps baking powder
  • 1/2 tsp baking soda
  • 1/2 c sugar
  • 1/4 tsp each ground cloves, nutmeg, & allspice
  • 2 tsps ground cinnamon
  • 2 large eggs
  • 1/2 tsp each ground cardamom, ginger, & black pepper
  • 1 tsp vanilla
  • 1/2 c liquid chai concentrate
  • 1/2 c sliced walnuts or pecans

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 In a large bowl, use a mixer to beat together sugar & butter until light & fluffy.
  • Step #3 Add squash, chai, eggs, & vanilla & stir until well mixed.
  • Step #4 Add flour, spices, baking soda, salt, baking powder, & nuts & stir just until evenly moistened.
  • Step #5 Pour batter into a buttered 8-inch loaf pan.
  • Step #6 Bake until a toothpick inserted in center of bread comes out clean, 45 to 55 mins.
  • Step #7 Let cool at least 10 mins.
  • Step #8 Serve warm or cool.
