Creamy Chicken And Noodles For 2 Recipe

Ingredients
  • 1/4 c fat-free buttermilk .
  • 1/2 lb boneless skinless chicken breasts .
  • 1 bay leaf .
  • 1/4 tsp salt .
  • 3/4 c sliced onions .
  • 1/4 tsp dried thyme leaves .
  • 1/8 tsp white pepper .
  • 4 oz uncooked yolk-free wide egg noodles .
  • 2/3 c sliced celery .
  • 5 oz reduced-sodium cream of chicken soup (1/2 can) .
  • 2 c water

Directions
  • Step #1 Cook pasta according to package directions, omitting salt.
  • Step #2 Drain; set aside.
  • Step #3 Meanwhile, bring water to a boil in Dutch over over high heat.
  • Step #4 Add chicken breasts, thyme, onions, salt, celery, bay leaf & pepper.
  • Step #5 Return to a boil.
  • Step #6 Reduce heat to low; simmer, uncovered, 35 mins.
  • Step #7 Remove chicken.
  • Step #8 Cut into 1/2 inch pieces; set aside.
  • Step #9 Increase heat to high.
  • Step #10 Return liquid in Dutch oven to a boil.
  • Step #11 Continue cooking until liquid & vegetables have reduced to 1 c.
  • Step #12 Remove from heat; discard bay leaf.
  • Step #13 Whisk in soup & buttermilk.
  • Step #14 Stir in chicken & pasta.
  • Step #15 Sprinkle top with parsley, if desired.
