Herb-crusted Sautéed Salmon Fillets With Pistou Recipe

Ingredients
  • For the pistou .
  • 1/2 tbsp fresh rosemary leaves .
  • 1 tightly packed c fresh basil leaf .
  • salt & freshly ground black pepper .
  • For the salmon .
  • 4 medium tomatoes, sliced fine quartered or 2 c assorted cherry tomatoes, quartered .
  • 2 garlic cloves, sliced fine .
  • 2 tbsps salt .
  • salt & freshly ground black pepper .
  • 1 tbsp fresh thyme leaves .
  • 1/2 c extra-virgin olive oil .
  • 1 1/2 tbsps olive oil .
  • 1 tbsp fresh oregano leaves .
  • 1 1/2 tbsps fresh marjoram .
  • 4 salmon fillets, skin & pin bones removed

Directions
  • Step #1 Pistou: Make the pistou within an hr of cooking the salmon, if made sooner it will lose color.
  • Step #2 Bring 2 quarts of water to a rapid boil with 2 tbsps of salt, plunge in the basil leaves, & stir them around with a wooden spoon, leaving them in the water for no more than 2 seconds.
  • Step #3 Drain in a colander & as soon as possible cool by rinsing them in cold water.
  • Step #4 Combine the basil, 1/2 c of water in a mixer & puree for 1 min, garlic, until smooth.
  • Step #5 Transfer the basil mixture to a bowl & whisk in the olive oil.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Just before sauteeing the salmon, carefully heat the pistou mixture in a saucepan while stirring.
  • Step #8 Don't allow the pistou mixture to come to a boil.
  • Step #9 Salmon: Spice up the salmon liberally on both sides with salt & pepper & let sit in refrigerator for between 30 mins & 4 hrs.
  • Step #10 Remove from refrigerator & sprinkle top & bottom with the sliced herbs.
  • Step #11 Press the herbs onto the salmon to help them adhere.
  • Step #12 Heat the oil In a large-ish pan (I use the cast-iron skillet).
  • Step #13 Place fillets skin-side down in the pan.
  • Step #14 Sauté over high heat for 3 to 5 mins on the first side, turn them over with a spatula, & sauté for 2 to 3 mins on the second side.
  • Step #15 If the salmon starts to brown or the oil smokes, turn the heat down to medium.
  • Step #16 Wipe out the hot sauté pan & add in the sliced or quartered tomatoes, stirring them just long enough to warm them.
  • Step #17 Spice up with salt & pepper.
  • Step #18 Ladle the pistou over & around each piece of salmon & spoon the warmed tomatoes over just before serving.
