Easy Lemon Mousse Recipe

Ingredients
  • 2 strained lemons, juice of .
  • 1/2 c honey .
  • 1/2 c heavy cream, well chilled .
  • 6 egg whites, at about room temp .
  • 1 pinch sea salt .
  • 2 grated lemons, rind of .
  • 6 egg yolks, at about room temp

Directions
  • Step #1 Place egg yolks, honey, lemon rind & lemon juice in the top of a double boiler over simmering water.
  • Step #2 Whisk constantly for about 10 mins until the mixture thickens.
  • Step #3 Remove from heat & chill in the refrigerator for about 30 mins.
  • Step #4 Meanwhile, beat cream until stiff.
  • Step #5 In a separate clean bowl, beat egg whites with sea salt until stiff.
  • Step #6 Fold lemon mixture into cream.
  • Step #7 Fold egg whites into cream & lemon mixture.
  • Step #8 Spoon into individual parfait glasses & chill well before serving.
  • Step #9 Note: You can make Lime Mousse too using the rind & juice or 3 limes instead of lemons.
