Crema De Fruta Recipe

Ingredients
  • 2 3/4 c milk
  • FILLING
  •  
  • 2 tbsps unflavored gelatin
  • TOPPING
  • 1 c white sugar
  • 3/4 c white sugar
  •  
  • 6 eggs
  • 1/4 tsp salt
  • 1 tsp ground nutmeg
  • 1 (15.25 oz) can fruit cocktail, drained & juice reserved
  • 5 egg yolks
  • 1 1/4 c cake flour
  • 1/3 c cake flour
  • 1/4 c butter, melted
  • CAKE
  • 3/4 c water
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Butter a 9x13 inch oval, glass baking dish.
  • Step #3 To prepare cake: Beat 6 eggs until fluffy.
  • Step #4 Beat in 3/4 c sugar until smooth & thick.
  • Step #5 Fold in 1 1/4 c cake flour, nutmeg & salt.
  • Step #6 Stir in melted butter.
  • Step #7 Pour into prepared pan.
  • Step #8 Bake 15 to 20 mins, until center springs back when lightly touched.
  • Step #9 Let cool 10 mins in pan before transferring to wire rack to cool completely.
  • Step #10 Split cake horizontally into two layers.
  • Step #11 To prepare filling: mix 1 c sugar, 5 egg yolks, 1/3 c cake flour, water & vanilla in a medium saucepan over low heat/flame.
  • Step #12 Cook & stir until thickened, 15 mins.
  • Step #13 Let cool completely.
  • Step #14 To prepare topping: Place reserved juice in a small saucepan over low heat/flame.
  • Step #15 Stir in gelatin & continue stirring until completely dissolved.
  • Step #16 Set aside.
  • Step #17 To assemble: Return bottom cake layer to glass dish.
  • Step #18 Spread half the filling over the layer.
  • Step #19 Top with remaining layer & remaining filling.
  • Step #20 Arrange fruit cocktail on top & cover with gelatin mixture.
  • Step #21 Chill 4 to 8 hrs, until set.
