Pear And Walnut Cheese Rolls Recipe

Ingredients
  • 1/3 c walnuts, toasted & finely sliced .
  • 1 (8 oz) container cream cheese with chives .
  • 1/3 c green onions, minced .
  • 2 tbsps butter .
  • 1 (15 inch) soft cracker bread (lahvosh) .
  • 6 c fresh spinach leaves .
  • 1/4 tsp black pepper .
  • 1/2 tsp salt .
  • 1 medium pear

Directions
  • Step #1 Run cold water & hold the cracker bread under it until thoroughly wet.
  • Step #2 Place the bread between wet, clean kitchen towels & let this stand about 45 mins or until soft enough to fold without breaking.
  • Step #3 Finely chop the 6 c of spinach leaves & set aside.
  • Step #4 Peel, core & finely chop the pear.
  • Step #5 In a large skillet, melt butter over med-heat/flame & add spinach, pear & green onions.
  • Step #6 Cook & stir until spinach is wilted & pear is tender.
  • Step #7 Stir in nuts, then remove this from skillet & let cool.
  • Step #8 In a medium bowl, mix cream cheese, salt & pepper.
  • Step #9 Spread the cheese onto the cracker bread or flour tortilla.
  • Step #10 Carefully spread spinach mixture onto cream cheese.
  • Step #11 Roll up the lahvosh or tortilla into a tight spiral, then wrap in plastic wrap.
  • Step #12 Chill for 4 hrs or up to 24 hrs.
  • Step #13 To serve, cut the roll this into 1/2 inch thick slices, or just cut in half for two lunch sandwiches.
