Pork And Sausage Jambalaya Recipe

Ingredients
  • 1 c cooking oil .
  • 1/2 lb smoked sausage, cut up .
  • black pepper, to taste .
  • 1 lb long grain rice .
  • cajun seasoning, to taste .
  • cayenne pepper, to taste .
  • 1 lb yellow onions, sliced .
  • 1 1/2 lbs pork, cut into chunks .
  • hot sauce, to taste .
  • 3/4 quart water

Directions
  • Step #1 In a 6-8 quart cast iron pot add one c of cooking oil & turn heat on medium to high.
  • Step #2 Add pork & cook this until all water evaporates from the meat.
  • Step #3 Turn heat to low & add onions on top of meat.
  • Step #4 Stir bottom frequently to keep pork & onions from sticking.
  • Step #5 Cook until onions become glazed & most of the liquid has evaporated from them.
  • Step #6 Add 3/4 quart of water & 1/2 lb.
  • Step #7 of sausage & turn heat to low boil.
  • Step #8 Make mental note of water level in pot.
  • Step #9 Cook 10 mins, adding seasonings to taste.
  • Step #10 Turn heat off & check water level to make sure it has not decreased much.
  • Step #11 Replace water if needed.
  • Step #12 Skim off excess oil, leaving a small amount.
  • Step #13 Turn heat back to low boil & season to taste again.
  • Step #14 Add extra salt & pepper because the rice will absorb much of the seasonings.
  • Step #15 Turn heat on medium to high & stir in the the rice & make sure the rice is completely covered by the water.
  • Step #16 Set the timer for 20-25 mins & don't touch.
  • Step #17 Stir & serve.
