Beef With Caramelized Stewed Tomatoes Recipe

Ingredients
  • 3 lbs boneless beef chuck shoulder pot roast .
  • 1 quart water .
  • 1/4 c brown sugar .
  • 1/4 c cider vinegar .
  • 2 (14 oz) cans stewed tomatoes .
  • 1/2 tsp fresh ground black pepper .
  • 3 tbsps oil .
  • 1 tsp salt .
  • 1/4 tsp ground allspice or allspice berries

Directions
  • Step #1 Heat oil on med high salt & pepper roast.
  • Step #2 place roast in hot oil & brown on both sides.
  • Step #3 add vinegar, stewed tomatoes, brown sugar, allspice & water.
  • Step #4 mix until sugar is dissolved.
  • Step #5 cover & cook on med heat 3 hrs.
  • Step #6 add water as needed to keep meat covered.
  • Step #7 Stir every once in awhile.
  • Step #8 Reduce liquid until tomatoes are dark in color, about 25-40 mins.
