Pat's American Home Fries Recipe

Ingredients

4 medium potatoes, baked (leftover, cold) .
1/4 tsp white pepper (canned) .
4 tbsps corn oil .
1/4 small onion, sliced .
2 tbsps salted butter .
1/2 tsp seasoning salt

Directions

Step #1 Leave the peelings on the potatoes & dice into 1/2-inch cubes.
Step #2 Melt the butter & add the oil In a large-ish no-stick skillet over medium-high heat.
Step #3 When the butter/oil is hot, add in the sliced potatoes & sliced onion.
Step #4 Fry until at least 1/2 of the sides have browned -- stirring & turning should be kept to an absolute minimum.
Step #5 Transfer the home fries to a serving plate with a couple of paper towels on it to absorb extra oil.
