Rhubarb-ginger Jam Recipe

Ingredients
  • 2 tbsps grated lemon peel .
  • 6 tbsps crystallized ginger .
  • 4 c sliced rhubarb .
  • 2 1/2 c sugar

Directions
  • Step #1 Combine all the ingredients in a medium saucepan, stirring over medium high heat until sugar dissolves.
  • Step #2 Bring to a boil & then reduce heat to medium.
  • Step #3 Simmer until jam thickens & mounds on a spoon (about 20 mins); stir often to prevent scorching.
  • Step #4 Transfer to jars, cover & chill in the fridge.
  • Step #5 Keep put in the fridged.
