Cajun Creamed Cauliflower Recipe

Ingredients
  • 2 lbs cauliflower, washed & broken into flowerets (9 c) or frozen cauliflower florets .
  • cayenne pepper, to taste .
  • 3/4 lb American cheese or mild cheddar cheese, sliced thin .
  • 1 tbsp butter or margarine, melted .
  • 2 slices bread .
  • pepper, to taste .
  • 1/2 c celery, sliced .
  • 2 c milk .
  • 1/2 c onions, sliced .
  • 1 tsp salt (or to taste) .
  • 2-3 garlic cloves, minced

Directions
  • Step #1 In a large, uncovered pot of boiling salted water, cook cauliflower 16 mins (follow package directions if using frozen cauliflower); drain well.
  • Step #2 Cut crusts off bread & soak in milk for 10 mins.
  • Step #3 Add melted butter, garlic, onions, & celery.
  • Step #4 Spice up to taste & cook over med-heat/flame until mixture forms a thick cream gravy.
  • Step #5 Cover up cauliflower with cream gravy.
  • Step #6 Cover up with cheese slices & bake in oven at 350°F until cheese melts.
