Step #1 Trim the baby okras & wash in cold water & then place this in a colander to drain.
Step #2 In a large saucepan, heat the oil or butter & add in the meat & brown on all side.
Step #3 Add the crushed garlic & sliced onions to the meat & saute till brown.
Step #4 Add in the sliced tomatoes, stirring in till the tomatoes are all broken down & soft, for about 10-15 mins.
Step #5 Add in all the spices & salt & give it a good mix.
Step #6 Add enough water to cover the meat (about 7-8 c) & stir this to mix well.
Step #7 Add in the trimmed okras & bring to boil.
Step #8 Cover up the pan with a lid & reduce the heat to low & let simmer for 2 hrs, until the meat is tender (the sauce will thicken as it cooks).
Step #9 Lastly, pour in the lemon juice & add in the sliced coriander & carefully stir once or twice (careful not to mash the okras) & carefully simmer for another 5 mins.
