Middle Eastern Lamb And Okra Stew (bamia Stew) Recipe

Ingredients
  • 700 g tomatoes, seeded & sliced .
  • 2 onions, sliced .
  • 1 tsp coriander powder .
  • 2-3 garlic cloves, crushed .
  • 1 bunch fresh coriander, roughly sliced .
  • salt .
  • 1 tsp cumin powder .
  • 400F g boneless lamb, cut into small chunks .
  • 4-5 tbsps oil or butter .
  • 600 g baby okra .
  • 125 ml lemon juice

Directions
  • Step #1 Trim the baby okras & wash in cold water & then place this in a colander to drain.
  • Step #2 In a large saucepan, heat the oil or butter & add in the meat & brown on all side.
  • Step #3 Add the crushed garlic & sliced onions to the meat & saute till brown.
  • Step #4 Add in the sliced tomatoes, stirring in till the tomatoes are all broken down & soft, for about 10-15 mins.
  • Step #5 Add in all the spices & salt & give it a good mix.
  • Step #6 Add enough water to cover the meat (about 7-8 c) & stir this to mix well.
  • Step #7 Add in the trimmed okras & bring to boil.
  • Step #8 Cover up the pan with a lid & reduce the heat to low & let simmer for 2 hrs, until the meat is tender (the sauce will thicken as it cooks).
  • Step #9 Lastly, pour in the lemon juice & add in the sliced coriander & carefully stir once or twice (careful not to mash the okras) & carefully simmer for another 5 mins.
  • Step #10 Remove from heat & serve this with rice.
