Orecchiette With Italian Sausage, Broccoli And Parmesan Cheese Recipe

Ingredients
  • 1 garlic clove, minced .
  • 1 tbsp sliced fresh basil .
  • 2 tbsps grated parmesan cheese .
  • 1 large shallot, minced .
  • 1 tbsp minced fresh chives or scallions, green part only .
  • 2 tbsps chicken broth or water or red wine .
  • 1 tbsp olive oil .
  • 1/8 tsp crushed red pepper flakes .
  • 6 oz orecchiette .
  • 2 links Italian turkey sausage, casings removed .
  • 2 c broccoli florets .
  • 2 tbsps tomato paste .
  • 1 tbsp minced Italian parsley

Directions
  • Step #1 Cut broccoli into bite-size pieces.
  • Step #2 Bring a large pot of salted water to the boil.
  • Step #3 Add the broccoli & cook for 4 mins or until almost tender.
  • Step #4 Drain broccoli & drop into ice water to stop the cooking.
  • Step #5 Drain again & set aside.
  • Step #6 Again, fill the pot with salted water & bring to a boil.
  • Step #7 Add the pasta & cook this until aldente, about 6 mins, drain & set aside.
  • Step #8 While water is boiling & pasta is cooking, heat oil In a large-ish skillet over med-heat/flame.
  • Step #9 Add shallot & garlic & cook this until tender, about 2 mins.
  • Step #10 Add sausage & break up with a wooden spoon & stir every once in awhile until mixture is crumbly & browned.
  • Step #11 Stir in tomato paste, crushed red pepper flakes & chicken broth (or water or wine).
  • Step #12 Add the broccoli & pasta & heat through.
  • Step #13 Sprinkle top on the parsley, basil & chives.
  • Step #14 Sprinkle top on the Parmesan or serve it on the side.
