Thai Coconut Fish Recipe

Ingredients
  • 1 stalk lemongrass .
  • 1 tbsp sugar .
  • 1 c chicken stock or fish stock .
  • 4 kaffir lime leaves .
  • 2 c coconut milk .
  • 4 white fish fillets .
  • 1 tbsp lime juice .
  • 1 small red chili .
  • 1 tbsp fish sauce

Directions
  • Step #1 Place stock, coconut milk, fish sauce, lime leaves, sugar, lemon grass & chili In a large-ish saucepan over med-heat/flame.
  • Step #2 Boil for ten mins, then lower the heat & bring to a simmer.
  • Step #3 Add the fish & poach for about three mins, until fish is just done.
  • Step #4 Remove the fish, cover & set aside.
  • Step #5 Reduce the sauce over high heat (about five mins), until slightly thickened.
  • Step #6 Strain & stir in the the lime juice.
  • Step #7 Serve the fish with cooked rice, covered with the sauce.
