Candied Cactus Recipe

Ingredients
  • 2 tbsps orange juice (fresh is best) .
  • 1/2 c water .
  • 3 c sugar .
  • food coloring (optional) .
  • 1 tbsp lemon juice (fresh is best) .
  • 3 c cactus pieces, cleaned of spines & cubed

Directions
  • Step #1 Clean off any spines & glochids (the little hairy spines) from your cactus paddles; peel green skin & cube into 1 x 1/2 inch pieces.
  • Step #2 Soak overnight in cold water.
  • Step #3 Drain very well.
  • Step #4 Make a syrup of sugar, water & fruit juices; add cactus & cook this until syrup is nearly all absorbed, taking caution not to scorch.
  • Step #5 May be tinted with food coloring if desired.
