Chicken Stew With Pepper And Pineapple Recipe

Ingredients
  • 1 tbsp packed brown sugar
  • 1 red bell pepper, sliced
  • 1/2 tsp hot pepper sauce
  • 1 (8 oz) can pineapple chunks, juice reserved
  • 1/2 tsp ground allspice
  • 1 tbsp minced fresh ginger root
  • 1/2 c chicken broth
  • 2 tbsps soy sauce
  • 1 tbsp cornstarch
  • 1 lb skinless, boneless chicken breast halves - cut into cubes
  • 4 c carrots, cut into 1 inch pieces

Directions
  • Step #1 Mix chicken, soy sauce, ginger root, broth, carrots, brown sugar, allspice & pepper sauce in 1 1/2- to 4-quart crock pot slow cooker.
  • Step #2 Cover & cook on low heat setting 7 to 8 hrs or until vegetables are tender & chicken is no longer pink in center.
  • Step #3 Mix cornstarch & reserved pineapple juice; slowly stir in theto chicken mixture.
  • Step #4 Stir in pineapple & bell pepper.
  • Step #5 Cover & cook on high heat setting about 15 mins longer or until slightly thickened & bubbly.
