Chicken In Coriander / Cilantro Sauce Recipe

Ingredients
  • 8 skinless chicken thighs .
  • 2 garlic cloves, finely sliced .
  • 1 tsp black pepper, freshly ground (or to your personal taste) .
  • 2 large onions, peeled & sliced .
  • 1 1/2 tbsps olive oil .
  • Sauce .
  • 1 c dry white wine .
  • 2 tbsps lemons, juice of (optional) .
  • 1 tsp salt (or to your personal taste) .
  • 2 bunches fresh cilantro, coarsely sliced (also called fresh coriander ** Reminder to use entire coriander, stems & leaf)

Directions
  • Step #1 Heat the oil In a large-ish non stick fry pan.
  • Step #2 When it is hot, add the thighs in one layer & saute them over medium to high heat for 4 mins on each side or until nicely browned.
  • Step #3 Remove the chicken to a platter.
  • Step #4 Add the onions to the dripping in the pan.
  • Step #5 Sauté for 1 min.
  • Step #6 Stir in the garlic, wine & coriander stems & sauté for 1 min longer.
  • Step #7 Return the chicken to the pan, add lemon (if your using it) salt & pepper.
  • Step #8 Bring the surrounding liquid to the boil.
  • Step #9 Cover up the pan, reduce the heat & boil carefully for 15 mins.
  • Step #10 Stir in the coriander leaves & serve 2 thighs per person.
  • Step #11 Serve with rice or cous cous.
