Spicy Roasted Red Pepper Soup Recipe

Ingredients
  • 1 c tomato juice .
  • 3 red bell peppers, sliced .
  • 2 green bell peppers, sliced .
  • 1 c milk .
  • 1-2 tbsp parmesan cheese, per serving .
  • 1 tsp salt .
  • 1/4 c green onions, sliced .
  • 1 tbsp dried basil .
  • 2-3 tbsps olive oil .
  • 2-3 tbsps red hot sauce .
  • 1/2 c plain yogurt .
  • 3 garlic cloves, minced .
  • 3 c water

Directions
  • Step #1 Heat olive oil in soup pot over med-high heat.
  • Step #2 Add sliced bell peppers, green onion, basil, garlic, & red hot sauce.
  • Step #3 Stir occassionally for 5-10 mins, or until peppers become soft.
  • Step #4 Stir in tomato juice, water, & salt.
  • Step #5 If you have a handheld mixer, you can mix the soup right in the pot.
  • Step #6 If not, remove a few c at a time (or enough to fill your mixer halfway) & mix to a smoothie-like mixture.
  • Step #7 Pour the mixed soup into a bowl & repeat with the rest of the soup, a few c at a time, until all of it has been mixed.
  • Step #8 Pour the soup from the bowl back into the pot.
  • Step #9 Note: If you prefer a smoother soup, mix longer - but I don't suggest any chunkier, as the skins of the peppers will be too noticeable.
  • Step #10 Add the milk & yogurt, & stir this to mix.
  • Step #11 Let simmer on low heat for 5-10 mins.
  • Step #12 Serve with parmesan sprinkled over top.
