Irish Colcannon And Thyme Leaf Soup Recipe

Ingredients
  • 1/2 tsp fresh ground black pepper, divided .
  • 3 tbsps water .
  • 8 c thinly sliced savoy cabbage (about 1 lb) .
  • 1 c sliced onions .
  • 1/2 tsp salt, divided .
  • 2 1/2 c sliced peeled baking potatoes .
  • 2 c water, plus .
  • 1 tbsp sliced fresh thyme leaves .
  • 3 c reduced-sodium fat-free chicken broth .
  • 2 tbsps butter, divided

Directions
  • Step #1 Melt 1 tbsp butter In a large-ish saucepan over med-heat/flame.
  • Step #2 Add potato, onion, 1/4 tsp salt, & 1/4 tsp pepper.
  • Step #3 Cover up & cook 6 mins.
  • Step #4 Add broth & 2 c water; bring to a boil.
  • Step #5 Cook 10 mins or until potato is tender.
  • Step #6 Combine 3 tbsps water & remaining 1 tbsp butter In a large-ish Dutch oven; bring to a simmer.
  • Step #7 Add cabbage & thyme.
  • Step #8 Cover up & cook 5 mins, stirring every once in awhile.
  • Step #9 Remove from heat; stir in the remaining 1/4 tsp salt & remaining 1/4 tsp pepper.
  • Step #10 Place half of potato mixture in mixer.
  • Step #11 Blend until smooth.
  • Step #12 Pour into a large bowl.
  • Step #13 Repeat procedure with remaining potato mixture.
  • Step #14 Add potato mixture to cabbage mixture; cook over medium-low heat until thoroughly heated.
