Vegan Mashed Cauliflower (instead Of Mashed Potatoes) Recipe

Ingredients
  • 2 tsps cornstarch (MIXED WITH) .
  • 1/4 c soy milk (fat free or other) .
  • 1 lb cauliflower florets (frozen or 1 head fresh) .
  • black pepper (to taste) .
  • 1/4 c water .
  • 1/2 tsp italian seasoning or Mrs. Dash seasoning mix .
  • 1 garlic clove, minced .
  • 1/4 tsp salt (optional) .
  • 2 tbsps water

Directions
  • Step #1 Cook frozen cauliflower by following the package directions.
  • Step #2 Cook until it is very well done (soft!) approximately 8-10 mins.
  • Step #3 (You may also use 1 lb of fresh cauliflower.
  • Step #4 ) Put into a colander & drain.
  • Step #5 While cauliflower is cooking, garlic, water, & seasonings, mix soy milk, in small saucepan over med-heat/flame.
  • Step #6 When it reaches a boil, add the cornstarch/water mixture, stirring constantly until thickened.
  • Step #7 Set aside for next step.
  • Step #8 When cauliflower is cool enough for you to handle, squeeze as much water out of it as possible.
  • Step #9 (Put it into a colander & pressed it with the back of a big spoon.
  • Step #10 ) Next, put the cauliflower into a food processor/blender & whir on high for a min or just mash with a fork.
  • Step #11 Add the sauce from step 2.
  • Step #12 Process/stir until the cauliflower is creamy & smooth.
  • Step #13 Check the consistency.
  • Step #14 If it is too thick for you, mix, add a tiny bit of soymilk, & check again.
  • Step #15 Too much liquid & you will end up with soup! Add extra seasoning to taste.
  • Step #16 Serve hot/warm.
  • Step #17 You may need to heat it quickly in the microwave before serving.
