Curried Squash, Garbanzo Bean, And Potato Stew Recipe

Ingredients
  • 2 (10 oz) packages frozen cooked yellow squash
  • cilantro leaves, for garnish
  • 2 (14 oz) cans vegetable broth
  • 2 tbsps yellow curry powder
  • 1 tsp ground cayenne pepper
  • 1 (8 oz) container plain yogurt
  • 3 large Yukon Gold potatoes, sliced
  • 3 tbsps olive oil
  • 1 medium yellow onion, sliced
  • 2 (15 oz) cans garbanzo beans
  • 1/2 head cauliflower, sliced into bite size pieces

Directions
  • Step #1 Heat the olive oil & cayenne pepper in a large pot over med-heat/flame, & saute the onion until tender.
  • Step #2 Spice up with curry powder.
  • Step #3 Pour in the broth, & mix in the potatoes.
  • Step #4 Bring to a boil, reduce heat to low, & let simmer 20 mins, or until potatoes are very tender.
  • Step #5 Mix the squash & cauliflower into the pot, & continue cooking 30 mins.
  • Step #6 Mash the garbanzo beans with a fork, & mix into the pot.
  • Step #7 Continue cooking 5 mins, until heated through.
  • Step #8 Top with yogurt, & garnish with cilantro to serve.
