Broccoli Soup Creamed With Tofu Recipe

Ingredients
  • 1 x Salt & pepper to taste
  • 1 x Grease for the pan
  • 2 tb Matzah meal, divided
  • 2 pk Frozen broccoli; (10 oz each
  • 1 x SANDI BROOKS
  • 1/2 c Mayonaise
  • 3 ea Eggs
  • 1 tb Onion soup mix

Directions
  • Step #1 Cook the broccoli according to package directions.
  • Step #2 Drain thoroughly.
  • Step #3 Set aside.
  • Step #4 In a mixing bowl, beat the eggs very well with the salt, pepper & onion soup mix; ass the mayonaise & contiinue beating until well mixed.
  • Step #5 stir in the the cooked broccoli.
  • Step #6 Grease a 7 x11 1/2" baking pan.
  • Step #7 Dust lightly with 1 Tbls of the matzah meal.
  • Step #8 Pour broccoli in the pan & Sprinkle top the top this with remaining matzah meal.
  • Step #9 bake this at 350 for 40-50 mins, or until the top is golden.
  • Step #10 Serves 4-6.
