Baked Stuffed Mushrooms Recipe

Ingredients
  • 100 g Breadcrumbs;
  • 4 Tomatoes
  • Few basil leaves;
  • 4 tb Olive oil
  • 1 Bag mixed salad leaves
  • 200 g Mozzarella cheese;
  • 2 tb Fresh parsley
  • 100 g Each of oyster & girolles mushrooms;
  • 4 lg Flat mushrooms

Directions
  • Step #1 Pull the central stalks out of the mushrooms & roughly chopp.
  • Step #2 Heat the oil in a frying pan & fry the onion for a few mins until softened.
  • Step #3 Add the mushrooms, breadcrumbs, basil, tomatoes & cook for a few more mins.
  • Step #4 Place the mushrooms on a baking tray, with the c side uppermost.
  • Step #5 Drizzle with a little oil & Spice up this with salt & pepper.
  • Step #6 Spoon the filling into the mushrooms & Spice up this with salt & pepper.
  • Step #7 Bake in an oven preheated to 200?C/400?F/gas mark 6 for 15-20 mins until golden.
  • Step #8 Serve on a bed of salad leaves.
