3 tb Butter or margarine 1 c Coffee cream or undiluted
& sliced 1 ts Salt
Salt 1/2 c COCA-COLA
1 md Onion, thinly sliced 1/8 ts White pepper
Chicken, cut-up 1/3 c Raisins
2 1/2 lb Chicken breasts or a For experienced palates)
Directions
Step #1 Rinse the chicken pieces.
Step #2 In a pot of boiling salted water, cook the chicken with a few celery tops.
Step #3 Cover & let simmer about 1 hr or until fork-tender.
Step #4 Drain & strain the broth; reserve.
Step #5 Bone the chicken & cut it into 1/2-inch pieces to measure about 2-1/2 c.
Step #6 In a skillet, melt the butter/margarine.
Step #7 Add the apple, onion, & curry powder & saute for 5 mins, mixing well.
Step #8 stir in the the raisins, 1 c of the reserved chicken broth, & the Coca-Cola.
Step #9 In a bowl, mix flour with the coffee cream/evaporated milk, stirring until smooth.
Step #10 Add with salt & white pepper to the onion/apple mixture.
Step #11 Stir & cook over low heat/flame until thick & creamy.
Step #12 Taste for Spice uping.
Step #13 Add the chicken & turn into a covered container to chill overnight.
Step #14 Reheat in the top of a double boiler over hot water & serve on cooked rice with a selection of condiments (See NOTE below).
Step #15 NOTE: Provide a sampling of the following condiments for sprinkling on top of each serving: grated coconut, sliced peanuts, sliced raw onions, sweet pickle relish, chow chow, raisins, chutney, and/or lime wedges.
