Char Siu Bao (meat & Vegetable Buns) Recipe

Ingredients
  • 3/4 lb Pork loin, boneless
  • 1 ts Salt
  • Hoisin sauce
  • 2 Scallions
  • 1 ds White pepper
  • 2 tb Oyster sauce
  • 1 ts Cornstarch
  • 1/2 ts Soy sauce
  • 1/4 c Chicken broth
  • --FILLING-----

Directions
  • Step #1 ---DOUGH------ 1 c Milk; scalded 1/4 c Sugar; (I add a little more) 1 tb Shortening 1/4 ts Salt 1 pk Yeast, dry 2 tb ;Water, warm 1 Egg white (opt) 3 c Flour Filling: Cube meat & stir fry in some oil with minced onion.
  • Step #2 (mush- rooms & bamboo shoots can also be added) Cook meat until no longer pink.
  • Step #3 Add chicken broth to pan.
  • Step #4 Heat to boiling, then cook covered for Stir oyster sauce & cornstarch into 1 tbsp water, add to pan.
  • Step #5 Cook some more until thickened.
  • Step #6 Dough: Do the usual stuff about scalding milk, shortning, then stirring in sugar, & salt; cooling the milk mixture; proofing the yeast; etc.
  • Step #7 Stir the yeast & egg white into milk mixture, then pour over 3 c flour in bowl & stir until smooth.
  • Step #8 Add more flour until dough is easy to handle.
  • Step #9 Knead, let rise, & punch down.
  • Step #10 Divide dough into 20 pieces, roll each piece into 3 inch circle.
  • Step #11 Put 1 tbsp of filling in center, then twist to seal.
  • Step #12 Place on 3 inch square of waxed paper.
  • Step #13 Repeat 19 times.
  • Step #14 Cover & let rise 20 mins, then steam.
  • Step #15 I use a metal strainer in a pot with a little water & a cheesecloth tied over the pot lid (to prevent condensation).
  • Step #16 Cover & steam for 12 mins, then enjoy! from the rec.
