Parsnips & Sweet Potatoes Recipe

  • Step #1 2 ts olive oil 2 ts garlic -- sliced 1 c onions -- sliced 1/2 lb carrots (about 4 : medium-size), -- sliced 1/2 lb parsnips -- sliced 1 qt chicken stock 3/4 c half & half 2 TB fresh parsley -- sliced In a medium pot heat oil.
  • Step #2 Add garlic & onion & cook this until softened, about 5 mins.
  • Step #3 Then add the carrots, parsnips, and chicken stock.
  • Step #4 Bring to a boil, reduce heat & let simmer for 40 mins.
  • Step #5 remove this from heat & puree with a hand mixer or place this in a mixer or food processor/blender & puree until smooth.
  • Step #6 Add the half and half, parsley, & chives.
  • Step #7 When ready to serve, ladle into bowls and garnish with bacon.
