  • 3 scotish bonnets (hot caribbean peppers)
  • 4 tablespoons whole jamaican allspice (pimentos)
  • 2 onion peeled and quartered
  • 4 cloves garlic peeled
  • 1 bunch fresh thyme
  • 4 sprigs parsley
  • juice of 1 lime
  • juice of 1/2 orange
  • 1 bunch of scallion trimmed and cut to be easily blended
  • 10 whole cloves
  • 3-4 pieces peeled ginger
  • 1 teaspoon cinammon
  • 2 tablespoons brown sugar
  • 1/2 teaspoon nutmeg
  • 1/2 CUP LIGHT SOYSAUCE
  • 2 tablespoons cider or white vinegar
  • 1/4 cup worcestershire sauce
  • 2 tablespoon vegetable oil

Directions
  1. please wear surgical gloves and avoid touching skin or eyes.
  2. in a large blender or cusinart, put in onions,garlic,hot peppers
  3. lime and orange juice. whiz in blender till smooth. about 1-2 minutes
  4. add thyme,parsely,ginger,scallion and run blender again add the rest of the ingredient one by one. pour in oil as last item
  5. run blender till all ingredients are smoothly blended.
  6. :
  7. pour all contents in a large glass jar. cover tight with a lid. place in ridge and use one needed. will keep for months

I am going to have to make this. I am always buying Jerk seasoning. How much does this make? A cup... I would like enough to do 2 chickens.


I made this recipe. It is a wonderful blend of spices and vegetables. It makes about 6 - 8 cups. I used large onions. I've been looking for this marinade for years. It is awesome.
